4 ounces unsalted butter, softened
½ cup sugar
2 cups flour
¼ cup white chocolate, melted
Mix softened butter and sugar until smooth. Add the egg and stir well to combine. Sift in the flour and fold until fully incorporated.
Cover the dough with plastic and rest in a fridge for 45 minutes.
Preheat the oven to 350˚F.
Roll out the dough, then use a 3-inch round cookie cutter, cut out the dough. Cut out center of each cookie with using a 2-inch round cookie cutter.
Bake for 6 minutes.
Place hard candies in the center of the cookies and bake for another 4 minutes (or until the hard candies have melted). Let the cookies cool completely.
Microwave ½ cup white chocolate for 20 seconds.
Add sprinkles onto the hard candy. Take another cookie and drizzle the melted chocolate around the rim. Combine the cookies to make a sandwich and enjoy.
